Fueled by Firewood, Crafted by Hand

At the core of Up All Night Bakery’s operation stands an impressive wood-fired oven that distinguishes their breads from anything else in Richmond. Hand-built by Massachusetts-based Hearth and Timber, this 7,000-pound masterpiece combines traditional techniques with modern mobility.

Despite its substantial weight, the oven rests on a trailer, allowing it to be relocated when necessary. The firing process itself is an art form—each bake cycle begins with 80-100 pounds of carefully selected firewood that burns for approximately six hours, generating intense heat that penetrates deep into the oven’s masonry structure.

Baked While You Sleep, Devoured by Morning

The overnight transformation is where the magic happens. After spreading the remaining coals, closing the doors, and adjusting the damper, the bakers allow the accumulated heat to distribute throughout the masonry. By morning, only ash remains, which is swept away before baking begins using the retained heat.

This traditional method yields impressive efficiency, with the capacity to produce between 100-150 loaves in just 1-2 hours. The versatile oven turns out a remarkable variety of products beyond standard loaves—from sourdough and traditional baguettes to rustic flatbreads, fire-roasted vegetables, and even artisanal pizzas.
